Incredible Edible Egg Cups!

So I guess Comcast felt that the last comment I made was unwarranted and decided to cut my cable and internet our for an entire day, boo.  But that's okay because nothing exciting or fun happened yesterday (Sunday) anyways, just a lot of chores, and a lot of work.

On to my favorite day, Monday! After class I did my normal stadium ramps routine (800 calories) and had to make a quick stop at Publix before getting home. Good timing call too because no one goes to "spit mad game" in the afternoon at our Publix, so I got in and out no problem. I think I am the only one to I say this but, I really am sad winter is disappearing and the warm weather is starting to set in. I didn't get to wear all my cute sweaters and scarfs and kicky boots yet. On top of the fact that I think our AC is out in our house and it is warmer in the house than it is outside...blaaah. Makes for a real relaxing afternoon.

For lunch today I decided to make a favorite of mine and Mike's, Egg Cups! They are super yummy and easy to make. I got the idea while perusing my way through the organic section and came across those won ton wrappers in the produce section. I though how cute they looked and what could I use them for? An hour, and one mini muffin tin later, egg cups were born!

I just spray the pan with Pam and push the wrappers into the tin.
I wanted something with protein but not a lot of fat to fill it with so I use egg whites and normally chop up carrots, zucchini, chicken, and add spices.

However, today I had none of those things so I improvised and decided to make...drumroll please...Eggcup McMuffins! I had some canadian bacon and shredded cheddar cheese in the fridge so what the hey. I just chopped those up, portioned it into each cup, and filled them with liquid egg whites.

And since there were no veggies in the cups this time, asparagus to the rescue!
Now that I have stuffed my face with eggcups and asparagus I have to go get ready for work. I am super excited for "The Bachelor" tonight! Thank goodness my DVR is working again or this could have been a tragedy. Now all the weirdos are gone and it starts getting good, Brad better pick my choice. Alright time to go pretend I like serving and cleaning up after people...

Fuddy Duddy Fridays

So I can say, without a doubt, I am not your typical college student. While Fraternity and Sorority guys and girls flock to our nearest campus bar, looking fancy and shiny for "The happiest of all hours" or to normal people, "Happy Hour," I have absolutely no interest in partaking in these festivities. I have done so a couple of times in the past and the luster of chugging huge pitchers of watery beer has just worn out. I'm not knocking those who truly love and look forward to this each week, I'm just saying it's not for me. I would rather be pumping it out to a crazy Ke$ha song in the gym in comfortable shoes and spandex. Luckily, when I got out of work this afternoon I had a ton of energy and wanted nothing else but to clock some miles and jump some speed rope.

So with my awesomely nerdy playlist, chock full of Glee covers, and random Itunes suggested songs I had an awesome sweat session at around 700 calories. Even though our campus gym isn't my favorite place to work out, sometimes the need to be in an actual gym, and feel a treadmill is irresistible, to me anyways. Also, watching some of the girls coming dressed like there is a fashion shoot happening is quite entertaining even though they never seem to break a sweat...hmmm I wonder how they do that?

After I finished, I headed home to wash up and figure my night out. I subscribe to Lululemon Athletica on Twitter and remember seeing this article they posted a couple of days ago. I love this companies workout clothes and Zen minded spirit. They always have a way of making me look at the positive in my day. The contest was for the best "Energy Ball" creations people could submit or come up with, so naturally being food related, this had me intrigued. Since I am constantly on the go but need things to munch on, these energy balls sounded right up my alley. I chose to make the

  • 1 cup each: toasted sunflower seeds and sesame seeds, rolled oats, chocolate chips, raisins, and cranberries
  • 1/2 cup cocoa
  • 2 cups peanut butter
  • 1/2 cup honey
  • 1.5 cups toasted coconut, for coating
So with this in mind I set off to Club Pub (Yes, most of the college students in Tallahassee call our Publix this because it is the best place to pick up your date to the next social outing you plan on attending...aiming high) to get some ingredients! Plus I needed a rotisserie chicken for dinner so why not. An hour later, and probably way more than I planned on getting I returned home with my share of loot. I put everything else away and set out all my ingredients for these Energy balls.
I decided to use flaxseed instead of sesame seeds because daaang they are exspensive.



Basically just put everything in a bowl and mix...

Use a cookie scoop to make balls and roll in the coconut.

Yuuumm....Energy Balls.


So that was fun. I made some without coconut on the outside because Mike doesn't like it and maybe he will want to take some to work with him. After I put all the mess away, I tupper-wared the balls up and stuck them in the freezer (thats what it said to do on the website so I'm gonna go with it.)

Now I figured I could get a jumpstart on my homework due Monday or surf the web and watch "Desperate Housewives." Hmmm, I do have quite a few CSI:NY's I need to watch, because if I don't my DVR will fill up and then Comcast wins. Okay, it's decided, I must watch my shows to get the best value out of this service I pay for each month, good talk and decision! :)

Time for some DVR time!

You know how every week we wait for Wednesday "hump day" to come around and rear it's ugly head, just so we can face it and have the nice decline towards the weekend? Well my "Hump Day" this week was today, Thursday. At the beginning of the week one of my professors informed the class of a test we would be having today and I think my head did a 360 "WHAT?!?" So today was D-day and it was just about as painful as imagined. 

I woke up and wasn't really feeling my Green drink this morning, so instead I opted for some Oatmeal. Ever since Bob Harper (The Biggest Loser) has been amping this grain up so much, I've got a real craving for the stuff. Instead of water, I use unsweetened, chocolate "Almond Breeze" half because I'm lactose intolerant and half because this stuff rocks and is only 45 calories for a cup.

Add a little brown sugar splenda to it and its really to be eaten! Yum. After I ate this as slowly and procrastinatingly as possible...I had to study for my test.

Before I left for class I managed to chop some strawberries and blueberries to eat for after my exam, in between my two classes. 

So...the exam about as painful as I figured and maybe a little worse. Good thing I don't plan on being a revenue manager of any company because I probably wouldn't be your best bet. When I got back home I was STARVING. I read a post earlier in the day by my favorite blogger "PB Fingers" about her favorite breakfast, toasted cinnamon raisin bagel thin with a slice of cheese and some raspberry jam all smooshed together. Weirdly enough I just so happen to have all of these ingredients in my pantry and fridge. You know what they say about those great minds...

I think this is the first time I've taken a picture of food before I took some sort of bite.

Demolished that amazing snack, and I definitely will be repeating that one again. After I finished it was time to get ready for some kick butt kickboxing! I normally hate working out any time after noon but this class is an exception. So torturously awesome, it's addicting. And the class surely didn't disappoint. 700 calories burned later I was ready for more food. I didn't feel like doing anything domestic tonight so I convinced Mike "Ruby Tuesday's" salad bar was where it's at. After his double session sweat day at DeadGame MMA gym he could't say no. 

I think we barely said two words at dinner between bites of salad and gulps of water. The salad with an added chicken breast really filled me up and hit the spot. Now onto my couch to catch up with some much needed DVR time and relaxation. Hopefully I don't fall asleep out here...

Not enough hours in a day...

Wow I can't believe how much you can actually fit into one day if you try hard enough. I missed posting yesterday because it was just so jam packed full of stuff that my computer never even made it off the charger. Besides my normal school routine, I was super excited that I had the work night off and could make it to this amazing Kickboxing class taught by this crazy energetic lady Melissa. However, even better news, I got to the gym and found out my trainer was subbing for her and I love her kickboxing  classes! After a great burn from "legs night," and 900 calories later, I headed home to eat and start some much procrastinated homework and studying, boo.

For dinner I decided to make one of my favorite things, Fresh Market's Thin Crust Cheese Pizza. These things are amazing and super easy.  I also am able to add things to it to amp up the nutritional value of this plain pizza. After chopping up some basil and chicken, I sprinkled it on top and popped it in the oven along with some good ol' asparagus. In the ten minutes they were cooking I squeezed in a quick shower and could smell how awesome dinner was going to taste.

I swear there was more asparagus, I just got super hungry!

I also love this one balsamic glaze I found at Fresh Market that I constantly drizzle on things and makes a great topper to the pizza after its out of the oven. Dinner was so good I didn't want it to end. But, all good things must...and now onto the homework.

Up and early Wednesday morning, I made it through classes and had a great campus run (about 3 miles) and some fast agility stadiums before heading home. A smaller burn today of about 700 calories but that is okay because I am hopefully going back to kickboxing tomorrow night, and i'll need my strength. Lunch was my go to chicken, brown rice, and veggies, but I love how filling and easy it is to make. I wish I could say my day was going to get more exciting but it looks like work will have to suffice.  Errr I wish I wasn't craving those girl scout cookies I saw on campus earlier. Good thing I didn't have cash on me, or else they might have had to restock some major inventory in the Thin Mints and Tagalongs section.

Monday Madness

Unlike many people who hate Mondays, I live for them! Instead of "living for the weekend," I look forward to the fresh feeling that the start of the week has. Sundays I normally take as a day of rest from working out and let myself have those little indulgences I may have turned down during the week days. Luckily, this week I also had Sunday off from work so I mostly spent it doing homework, laundry, and errands. However, I was able to squeeze in an awesome lunch date with my friend, Sami.

Our favorite place to eat, that never seems to get old, is "Ruby Tuesdays," mainly for their extensive salad bar. This is the only place I know where you can have a different lettuce choice besides iceberg, which I have no interest in eating. We pile our salads high and catch up on our hectic past weeks that have slipped by so fast. In between bites we laugh and give advice that is much needed and welcomed. I needed this mainly for my mental sanity in weeks to come.  Monkey also helps as my comedic relief...

After lunch I realized I needed to get started demoing cakes and frostings for my friend Noly's wedding cake, which I will be making come May. She wants a very classic, white buttercream, square, tiered cake, so all I wanted to do was make sure the recipe I would be using would stand up as a cake, and not just cupcakes, which is what I previously used my recipe for. Everything went very well with only a couple of tweaks. However, instead of a traditional buttercream, I decided to make a "Swiss Buttercream" which has more sheen and doesn't crust as easily on the cake.

Mike and I had our piece to try but now I must find unsuspecting people to eat the rest :). The rest of my Sunday I spent finishing laundry and Mike and I were craving sushi so we stopped by Jasmine's for some before heading out to say goodbye to his family.















Now onto Monday! Up bright and early for class, I was able to grab a quick green shake before I had to run out the door. One thing I always make sure to do to ensure I get my workout in for the day is to put my workout clothes on first thing in the day. That way, no matter where I am, if i have time I can squeeze in a workout and will have no excuses. Especially having eaten that cake on Sunday, I needed a major cardio day. I decided after class to head over to our football stadium and run all the ramps that lead to every level. Plus, in between each ramp are sets of 4 stair flights that I can fit in. Since I had class an hour later, I tried to make the most out of every second of my workout. 800 calories later, I'm off to learn how to slowly die in an accounting class. 

Thankfully after class I had enough time to run home, shower, and make myself some lunch. Simple Mondays for me! Chicken, brown rice, and some asparagus really never tasted so good. When I have work late at night I try and switch my lunch and dinner so I'm not filling my stomach with useless carbs right before I go to sleep. Well, now that I have had 30 minutes of down time, it's time to get ready for work and make that money honey! Hopefully...here's to hoping this week won't turn me into a giant stress ball.

Suicide (workout) Saturdays

Waking up bright and early on a Saturday is not always my favorite thing to do but to go get my butt handed to me by my trainer makes it totally worth it. We all met up at the local high school because they have a great running track and ample space to spread out. The best thing about my trainer is that she always comes up with new, challenging feats to accomplish and I never feel as good as I do as when I am able to complete everything with stride.

So after we stretched and warmed up, Tiffany (my trainer) gave us the rundown. She set up six station, almost all involving kettle bells, along the side of one track about 15 yards apart. We started with mountain climbers, then would run to dead lifts. After this station you would run back to the start and do mountain climbers again and head to the third station, which was pushups. Then back to the mountain climbers and on to station four, back lunges while holding a kettle bell in one hand and pressing it up in the air. Once again, run back to mountain climbers, and run to station five, roll backs while holding a kettle bell. Run back to the start, mountain climbers, and on to the last station kettle bell swings, then squat. After all this run back to the start, do mountain climbers and complete a lap around the track.

We started with 30 repetitions of each exercise, did a lap, then 20 repetitions, lap, 15, lap, and then 10. I can't even tell you how good reaching the last round felt. All in all, I completed all of this in about an hour and 23 minutes. Then to cool down we ran a mile (nice). I felt so good afterwards, like I could accomplish anything. Burning 1100 calories doesn't hurt either. Plus, I was super excited for the rest of the day since we were spending it with Mike's family at the first FSU baseball game of the season!

Mike and I are both trying to watch out weight so we opted for the ever so healthy burrito bowls. I love these so much because for around 350 calories you get some protein, Barbacoa for us, veggies, a little rice, and some awesome guacamole. No chips today, the rice is enough starch to last. Also, it is super filling. We ran over to the gas station to pick up some waters and beef jerky for the game and headed to campus.

After meeting up with Mike's family and throwing the baseball around in the parking lot, we headed over to the stadium to get some good seats.

It was a great game!!! Funny hecklers, great weather, and best of all WE KILLED THEM. Regardless of the fact that we played Virginia Military Institute, any type of win feels good, especially for the first game at home.

We headed home to get cleaned up for the night. We plan on meeting his family at a local stir fry restaurant, "Ghengis Grill" but not before catching up on some awesome Steven Tyler driven American Idol. Keep y'all posted if anything out of this world happens after dinner, but if not, I am just happy to have the night off of work to spend with Mike and Monkey. Peace out.

Busy busy Friday...

So even though I had today off from work my day was jam packed full of activities and events. As an extra credit opportunity for a class I am currently taking we had to wake up at 6:30am this morning to do an on site hotel visit at out local "Residence Inn."

Once we finished up there (2 hours later) Mike and I wanted to get a good sweat in for the day. He has been training for a  boxing match in April so we headed over to our local MMA warehouse to kick some bootay! 


We started off with some tabata drills (Circuit training where you go ALL OUT for 20 seconds, rest for 10 seconds, and repeat 8 times) We modified it a little so we could add more cardio, by request of me :). After we finished that Mike hit pads for a bit and I finished up with some jump rope. All in all, a total of 760 calories burned.

We lefts and headed straight for home to chow down some food. Normally I'll have some berries and my "Looks like death," shake. Its just protein powder, spinach, half a banana, and ice but it tastes so good and is super filling. Mike had to leave for work and it was time for my errand day to start.

I ran to my favorite grocery store "Fresh Market" and picked up another rotisserie chicken and their amazing thin crust pizzas. The best pizzas to add shredded chicken and balsamic vinegar to, plus it is super healthy. I planned on having that for dinner. Then off to Publix to pick up these weird carbonated waters they only sell. I try not to drink soda but I love the carbonation and these things hit the spot and luckily have no calories, fat, or sugar. After that I made a stop at Walmart for some car washing materials and back to home I went. 

After washing my car and cleaning the house I am exhausted and plan on chowing down on my Fresh Market pizza!!! Maybe I'll even have time to catch up on some DVR'ed Jersey Shore....hmmm, well, talk to y'all later.

First Post

Hello there everyone!
Since this is my first post I am going to give a little overview of myself just in case you don't know me that well. My name is Hilary Hoesing and I am a 22 year old Student at Florida State University (GO NOLES!) majoring in Business Hospitality. Being in the Hospitality business has been a wonderfully eye opening experience to the diverse world that is food and people. I am slowly transitioning from restaurants and hotels into the world of fitness because I truly can say that it is one constant in my life that I make time for every day (well almost) even the bad ones.

I also love being creative in the kitchen when it comes to whipping up tasty and healthy dishes that don't take forever to make, being a busy college student and all. I grew up all over the place. I was born in Texas and am a proud Texan, don't mess. I moved to Fredericksburg Virginia in the second grade and then moved to Frederick Maryland for middle school. Around the time to start high school I made my tropical change of climate move to Coral Springs Florida. I may have moved a lot but I always have been an active girl. I swam competitively from the age of 8 (Lee's Hill Aquatic whooo) up until college, with some water polo in there as well. I then decided against the whole collegiate sport route and took my fitness goals outside of the water.

Once the dreaded freshman 15 reality set in, I decided I would do anything and everything it took to live healthy and be happy at the same time. I joined a local "girls only" gym with alternative methods of getting into shape and fell in love with it. I took "Booty Blast" classes, "Zumba" and various strength training course. I met my current trainers (Chris Florres and Tiffany Maruniak) and lifelong friends and it has been history ever since. I love anything and everything dealing with raising your heart rate!!! From Muy Tai boxing to dancing around like a crazy person I don't care. As long as I am enjoying what I am doing, i'll try anything. I enjoy TRX workouts, as well as kickboxing and plyometrics sets. I also have a thing about getting bored easily so I try and mix it up as much as I can in the week.

Currently I live with my boyfriend of three year, Mike, and my adorable ginger, long hair, fluffy kitty Monkey.

Yeh, they are both pretty cute and I love them very much. My hopes with this blog are that I can inspire someone, somewhere to find something that they enjoy and love as much as I love food and fun fitness techniques to keep my life sane. My dream would one day to work for either "Women's Health" or "Fitness" magazine and help others who are looking for direction in their lives when they need it most.

I am going to try and post as much as possible to keep you in tune with my life and new discoveries I come across and recipes I come up. Please leave any comments and or tips and tricks y'all feel you would like. I love learning and trying new things! Well...here goes nothing!
